Grape Variety:

Cabernet Sauvignon proprietor’s single vineyard grapes, from ungrafted selected clones of pre-phylloxera French rootstock.

Harvest :

Harvested in different stages to selected specific clusters with the desired degree of over ripeness in order to obtain higher concentraions of residual sugar. Hand-picked in 18 Kg. boxes and carried to the winery immediately after cutting Carefully selected before processing.

Vinification:

*Fermented in 30.000 liters steel tanks for 7 days at 24-27°C with selected yeast, controlled temperature until 13 % alcohol, then stopped fermentation with 30-35 gram of RS .

*Extended maceration for additional 5 days.

*100% malolactic fermentation.

*Stored in temperature controlled stainless steel tanks through bottling.

Serve between 12°C and 15°C
